Having been vegetarian for almost 14 years, and on and off vegan, I can tell you that this is honestly hands down one of the most delicious 'Vegan Chocolate Chip Cookie' recipes that I have ever come across.
In fact it is already the 4th time that I have made these cookies in the past two weeks, which if you ask me stands as a testament of how delicious these cookies are.
Mix together 1 Cup Brown Sugar and 1/2 Cup Coconut Oil in a large mixing bowl. I used a Kitchen Aid and it really helped with mixing the sticky coconut oil.
In the large mixing bowl with the Organic Coconut Oil and Brown Sugar, add 1/4 cup Organic Almond Milk and 1 tablespoon Vanilla Extract.
One of the times I baked these vegan cookies, I used Cashew Milk as an alternative to the Almond Milk, and I found that the cookies just did not come out the same.
The consistency of the wet ingredients will be a bit on the runny side, but this is wanted (as the dry ingredients will soak this mixture right up).
In a separate mixing bowl, measure out 2 cups Organic Flour, 1 teaspoon Baking Soda, 1 teaspoon Baking Powder, and 1/2 teaspoon Maldon Salt.
You can subsitute the salt if wanted, however I love the flaky goodness and taste that comes from adding Maldon Salt.
When adding the Flour to wet ingredients, I switch over to a wooden spatual for mixing.
The dough will be a little on the crumbly side, but once you add the chips the dough will become more sticky.
Mix in 1 cup chocolate chips with a wooden spatula or if you can find them try the Dairy-Free Enjoy Life Chocolate Chunks
I was able to make 28 1 inch dough balls
Bake cookies at 350 F for 8-10 minutes
In higher Elevation Bake cookies at 375 F for 8-10 minutes
1/2 Cup Organic Coconut Oil
1 Cup Brown Sugar
1 Tablespoon Natural Vanilla Extract
1/4 Cup Organic Almond Milk
2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1/2 Teaspoon Maldon Sea Salt Flakes
