The first cooking step is onions and potatoes, depending on the sun this can take anywhere from 30 mins to 70 mins.
While I am cooking the potatoes and onions, I chop the green onions and half the eggplant.
After checking on the potatoes and making sure they are soft, I add the eggplant and green onions. I always stir in the new ingredients.
After another 20-40 mins of cooking time, I add in the scrambled eggs.
You want to be 100% sure your setup is on flat ground, as when adding liquid you want it to cook evenly.
Finally with the help of the beautiful sun, the most healthy and scrumptious breakfast is ready (as you can see this particular meal was very vegetable heavy.
